Chipeño is the smoky, racy salsa with its own character. It has its origin in the north of Mexico. The hand-picked jalapeños are harvested as ripe as possible and then smoked over a wood fire, as the Aztecs did. This process gives the jalapeños their smoky and fiery flavor and turns them into what are known as chipotles. Chipeño, by the way, is a play on words from chipotle and jalapeño.
